Malvern pudding is a traditional pudding from the English town of Malvern in Worcestershire. It is a baked dish made with apples and custard.

Malvern Pudding

  • 1lb cooking apples
  • 2oz butter
  • 2oz granulated sugar
  • 1 oz plain flour
  • ¾ pt milk
  • 2 oz demerara sugar
  • ½ teaspoon cinnamon
  • 1 egg
  • grated lemon rind

Method

  1. Peel, core and slice the apples.
  2. Cook apples with 1 oz sugar and 1 oz butter.
  3. Add rind layer bottom of pie dish.
  4. Beat egg with 1oz of sugar.
  5. Combine flour & butter and cook for 2 mins.
  6. Add milk, boil, simmer 2 mins.
  7. Remove from heat, add sugar and egg mixture, cook 1 minute.
  8. Pour sauce over apples.
  9. Mix demerara sugar and cinnamon sprinkle over the sauce.
  10. Dot with butter and grill till caramelised.

The pudding was listed as one of the ten most "threatened puddings" after a survey conducted by UKTV Food. [1] A Malvern pudding features prominently in Carol Shields' award-winning novel The Stone Diaries, but the description of the food is entirely different from the true recipe.
