Traditional Cornish fairings

Cornish fairings are a type of ginger biscuit commonly found in Cornwall, UK. Their name is said to originate from sweet biscuits that were sold at feast and fair days in Cornwall. The recipe is reputed to have originated at the "maid hiring" fair, held the week after Christmas in Launceston. Originally more of a bread crumb based gingerbread, they have evolved to include biscuits flavoured and coloured with saffron, liquorice or sandal wood, and decorated with almonds, icing, marzipan or gold leaf although the traditional undecorated ginger variety is the one most commonly used.
