Carlos Adley (born Sept 20, 1968 in Inglewood, California), more commonly known as Big Daddy Carlos, is a Los Angeles nightlife impresario and owner of the Hollywood restaurant and ultra-lounge La Velvet Margarita Cantina.

Big Daddy first entered the nightclub scene in his late teens running the door at David Lee Roth's Hollywood after-hours club The Zero. Over the next couple of years he made the jump from promoter to DJ, all the while majoring in communications at Cal State Fullerton on a full athletic football scholarship. By his early twenties Big Daddy brought in casino heir Eddie Harrah and opened Sweet Daddy Browns private gambling speak-easy. Around this time Big Daddy decided to forego a career in professional football to pursue his passion for the Hollywood nightlife industry. From the summer of 1994 until 1998, Big Daddy Carlos was a DJ and promoter at Johnny Depp's Viper Room and other venues. During this time he also ran BC Productions and hosted industry events in New York, Las Vegas, San Francisco, Spain, Portugal and Australia. This was also the time he formed Chickenhawk (1995-2000 MCA, Capitol), the Rock N' Roll band in which he was the lead singer.^[1]

In 2000 Carlos wed nightclub owner and restaurateur Ava Berman and began the F.O.M.M. Corporation. In 2001 The F.O.M.M. Corporation purchased a quarter block of real estate in Hollywood in what is now known as the "Cahuenga Corridor". Big Daddy Carlos' property houses La Velvet Margarita Cantina, True Tattoo, Vinyl Fetish and Ashley Paige Designs.

Big Daddy recently celebrated La Velvet Margarita's five-year anniversary, earning accolades from the NHR's "Who's Who in Restaurants"^{[citation needed]}, Newsweek magazine's "#1 Zagat Rated restaurant in Los Angeles"^{[citation needed]}, Los Angeles magazine's "Top L.A. Hot Spots"^{[citation needed]}, KABC-TV "Top Seven in California"^{[citation needed]}, Tu Ciudad magazine's "#1 Tequilla Bar in Los Angeles"^{[citation needed]}, and letters of recommendation from Governor Schwarzenegger and Mayor Villaraigosa for outstanding achievement in the Hollywood business community.^{[citation needed]} In early 2008, Carlos teamed up with casino owner Terry Caudill (4 Queens & Binions) to master-lease and remodel the historical landmark Binions Hotel & Casino as part of the new-wave of downtown Las Vegas gentrification. La Velvet Margarita will soon open locations in Las Vegas, Macau, China and is planning to launch the Velvet Tequila line in 2010.

Big Daddy can be seen on TLC's reality show Ashley Paige: Bikini or Bust.^{[citation needed]}
